Camellien Octela, known as Chef JR, started in fast food and rose to Executive Chef positions in prominent Florida Keys restaurants. He graduated from Le Cordon Bleu and held executive roles before co-founding Shima.
John Rudolph, founder of John Rudolph Designs, brings his expertise in fine custom cabinetry and business acumen to Shima.
